3rd « Découverte du Sushi» competition at SIRHA 2007

The “Découverte du Sushi” competition offers European hotelschool students an opportunity to initiate themselves in the art of preparing one of the most emblematic dishes in Japan’s culinary repertory. It is an invitation to discover the techniques of preparing sushi.

The 3rd “Découverte du Sushi” competition will take place during the 2007 edition of the SIRHA International Hotel, Catering and Food Trade Exhibition. The Competition is being organized by SBA Ltd. with the support of numerous associations: Zen-sushi-ren (All Japan Sushi Association), Eurhodip (Association of European Hotel Schools), The Rhone Fish Syndicate… The jury will be made up of sushi professionals, chefs and European food and restaurant critics.

  Participant conditions  
                  Candidates must be enrolled in a European hotelschool
                  Candidates must be less than 22yars old
                  Candidates must not be of Japanese nationality

 Themes 

                 1. Nigiri Express   Rapidity: prepare 20 salmon Nigiri in a short time period
                 2. Sushi Nippon    Technicity: prepare a traditional platter on Nigiri and
          Hoso-maki sushi

                 3. European Roll   Creativity: create an original Maki recipe using ingredients
          from the candidate's country
